I have a 350 with a rod knock.  Should I rebuild the motor or swap it with another?  If I swap, what other trucks or cars with 350's can I use without to much hassel?  Thanks

You might want to think about an LT1. You'll need a new engine computer, since it's multi-port injection instead of throttle-body. You could also just put in a rebuild with a core-exchange. Edelbrock offers a whole line of small-block crate motors from mild to wild. Might want to check them out.

Best no hassle method is usually a remanufactured long block.
